Summer's bounty - Peaches - roasted pablanos - roasted corn

I love cooking and baking. This isn't so much an exact recipe, but a delicious suggestion open to interpretation. I've been buying peaches by the case full at our local farmers market and I also picked up some roasted poblano peppers and corn this weekend. So I thought I'd experiment and toss these 3 together. It was a delightful and delicious surprise! I encourage you to try to make your own variations and let us know. Have fun and enjoy.

2 ears roasted corn 
2-3 roasted poblano peppers
2-3 peaches, chopped into mouth size bites
~ 1/4 of a medium red onion - finely chopped
~ 1/4 cup lime juice
~ 1/4 apple cider vinegar
Salt to taste

To roast corn, set your grill on medium high. Soak corn in water for about 15 min. Drain corn. Place on grill for approx 20 min rotating every 5 min. Take off grill and let sit for about 10 min. Shuck corn and cut off cob.
