Breakfast idea

I am the breakfast queen in our house! I love making breakfast and look forward to the weekends. You can usually find me baking [again]! I must love to bake ;) This isn't an exact recipe, more or an idea. Enjoy.

Hash browns - the trick to making crispy hash browns is to RINSE the potatoes before frying. I like to use russet potatoes. Use a grater or food processor with the coarse grate. Rinse the potatoes and dry thoroughly with a towel. Fry potatoes in a bit of vegetable oil with salt and pepper. 

Asparagus wrapped in prosciutto - I have never made these for breakfast before but they were amazing with eggs and hash browns.  Preheat oven to 350. Wash and trim asparagus. Wrap 1 piece of prosciutto around each asparagus. Bake for about 15 min, rotating about 8 minutes in. Optional...sprinkle with parmesan and broil for 2-3 min to melt the cheese and a nice, crispy finish. 

I love using cast iron pans. Our family has 2 cast iron pans that live on top of our stove. They are so well seasoned, frying eggs is so easy. So this Sunday morning I treated us to crispy hash browns, fried eggs and prosciutto wrapped asparagus - delicious!
